Crispy Eggplant


Let’s go veggie! =) If you’re already tired of making eggplant frittata, or want to try something new, you can cook this very simple dish. You can enjoy this as a snack, or make it as your appetizer. Kids won’t even notice that this is an eggplant!

 When I cooked this dish yesterday, my mom, hubby to be and so with my ninang, really enjoyed it! They were really amazed how this vegetable was turned into a delicious snack. Who would have even thought that you can eat Talong as your Snack? =)


What you need
1 long eggplant, cut diagonally
1 egg, lightly beaten
¼ cup of flour, with ¼ teaspoon pepper and ½ tablespoon of salt
Canola cooking oil for deep frying
1 cup of Japanese Bread crumbs.

What you need to do

♥ Dredge one eggplant on the flour mixture. Dip it on the eggs, and then cover it with bread crumbs. Do this with the rest of the eggplants.

♥ Deep fry the coated eggplants; until golden brown and crispy.

♥ Top with your favorite Sweet chili sauce

♥ Serve with love and Eat without Guilt!
