Duy Duy - Squash and Ampalaya Leaves

I grew up eating vegetables, so it's not a big deal for me if I eat vegetables every day of my life. ♥ (exaggerated, much) 


DuyDuy is like a pumpkin soup, but the twist here is that it has Ampalaya Leaves. So if you love to eat Monggo and Pinakbet, I am pretty sure you would really love this dish. To top that, this recipe is really affordable! You only need 2 bunches of ampalaya leaves (10 pesos) and 20 pesos worth of squash. 


Aside from being affordable, it's really healthy! 

My packed duyduy for tonight's work. Yummy!!! ♥

What you need: 
1/2 squash
2 bunches of ampalaya leaves
10-20 small slices of liempo (or any pork will do)
canola cooking oil 
1 small onion, minced 
1/4 cup of water 
Salt to taste

What you need to do: 
♥ Heat the pan. Sautee the onions. 
♥ Add the liempo. Cook for 1-2 minutes; or until you no longer see the "pinky color"
♥ Add the water
♥ Add the squash. Mix it until it gets soft. Once softened start to mash it using spatula. Continue mixing it. 
♥ Season with salt
♥ Once the squash has been mashed, you may now add the ampalaya leaves. Simmer for 2-5 minutes
♥ Serve with LOVE and ENJOY!!!
